Eco Iced Tea: Thyme Arnold Palmer

Recipe #4: Thyme Arnold Palmer

This recipe is a fun take on the traditional Arnold Palmer. Use thyme from your repurposed balcony planters for the freshest herbs with the smallest carbon footprint. Try pairing this drink with ceviche made with sustainable seafood.

Ingredients:

1 1/2 cups sugar

1 bunch fresh thyme sprigs

2 cups fresh lemon juice (about 13 lemons)

Earl Grey tea (2 tablespoons loose leaf or 6 tea bags )

Directions:

 

In a medium saucepan, bring sugar, thyme and 1 cup water to a boil; stir until sugar is dissolved. Add tea and let steep for 15 minutes. Stir in lemon juice and 6 cups cold water, and strain into a large pitcher. Allow the pitcher to cool to room temperature. Serve over ice.
