i think a huge part of this answer rests in how long the countertop will remain in use... my guess would be 10-15 years tops. it's increasingly unusual to see many older than that, so trying to justify a granite countertop citing longevity, despite its huge carbon footprint may be a non-sequitur if it's only going to be replaced by a different color in 8 years when the new homeowner moves in.
